squash muffins

I am about to be your new best friend. I thought this was Matt's sister's recipe, but she says she got it from Matt's Aunt Katherine. Katherine, you are my hero.

I don't know about you, but I can only take so much fried squash, baked squash, and sauteed squash... enter Squash Muffins.


Yellow Squash Muffins

2 lbs. yellow squash (about 8 medium or 5 large)
2 eggs, beaten
1 cup melted butter
1 cup sugar
3 cups all purpose flour
1 tbsp and 2 tsp baking powder
1 tsp salt

Preheat oven to 375. Wash squash, trim off ends, cut into slices. Cook in boiling water 15-20 minutes or until tender. Drain WELL and mash.

Measure out 2 cups of squash and mix with eggs and butter, set aside.

Combine remaining ingredients in large bowl, add remaining squash and the squash mixture, stir just until evenly moistened.

Spoon into greased muffin cups, filling 3/4 full. Bake for 20 minutes or until golden brown on edges (not whole muffin).

This recipe makes 18-24 muffins.


I used Country Crock Lite instead of butter, and they still tasted great. Next time, I think I will try replacing at least some of the sugar with apple sauce and see how that goes. I had to bake them for 25 to 27 minutes, which is a little longer than the recipe says. But it's definitely true about just baking them until the edges are brown, not the whole muffin. They were PERFECT!

I didn't have enough yellow squash from my garden, so I combined yellow squash and zucchini. Matt was a little concerned about how that would taste, but I told him, "If a recipe calls for a cup of butter and a cup of sugar, it's going to taste like butter and sugar."

And he was pleased, as you can see.

It really is a great way to use some of your garden (or Farmer's Market) squash if you are tired of the same old thing. And they freeze well too. Kim says she always makes a double batch, freezes them and then just thaws them and heats them in foil in the oven. Tasty, even the second time around. Let me know if you try them!

Patrice, do you know if you can freeze these muffins? My crew doesn't like squash, but I LOVE it and I am always looking for a way to fix it to make it last longer so that I can get more mileage out of it. This sounds good and I look forward to trying it. Thanks for sharing.

Sounds yummy - it might even be a way to get my non-veggie child (no names, but she's 10 and loves Jonah) to eat squash!

...I just won't tell her that's what she's eating. :)

I wondered when you said something about squash muffins from Kim if it was the recipe I sent to the family years back ... BECAUSE THEY TOTALLY ROCKED AND I WANTED TO SHARE THE SQUASH MUFFIN GOSPEL. I use Zuc in muffines, pancakes, bread all the time, but had never thought to use yellow squash--great idea and thank you for the recipe. I will be baking these as soon as my new oven arrives on Friday.

Ohhh, sounds unique and tasty. I am currently on a baking hiatus since my husband, daughter Anna and I are traveling back to the states tomorrow and I can't start anything new in the kitchen :( But I think I will try these when I get there with my mom perhaps? Thanks for the recipe. Laura V.

I was going to post a comment to you today and ask you for the recipe (my fridge is overflowing with squash). Too funny, I think I am destined to make them today!! I also wanted to add that I have worked with your mom for the past couple of years (love her) and I hope she has found somewhere great to go to next year!! Those sound soooo good! Thanks for sharing. I am out of fresh squash today, and can't hit the market since my little one is sick. But I do have some frozen squash. I wonder if those will work as well?

they sound wonderful, I have been trying to come up with more ideas for the massive amounts of squash we have in our garden, I've tried squash casserole, a pasta salad with squash, roasted veggie so I will be excited to try these. Have a great day!!

I'm from Canada and so I am not sure what you mean when you say "Yellow Squash.." Is it the spaghetti squash? Maybe could you post a pic of the squash for us? Thanks. Mostly we eat the imported acorn squash...

I tired these muffins because my little by (2 years old) refuses to eat any vegetables. I thought they were good but his response was "It's not tasty!" I guess that is a 2 year old for you.

I don't usually comment because I'm usually reading via Google Reader at work (shhhhhh...), but I couldn't resist any longer. I'm not a big fan of squash by itself, but I'm going to try the recipe anyway. I'm trying to eat healthier, so I think I may try to substitute with some applesauce, too. My kids love muffins, so these will be disquised as our regular Saturday morning muffin mix. I might throw in a handful of mini chocolate chips to make them more kid friendly. I've had pumpkin chocolate chip muffins that were delicious, so I imagine it will be equally scrumptious!

Oh, the older Jonah gets, the more he looks JUST LIKE YOU!! Your whole family is precious and such an insiration. Enjoy the beach!

Patrice - YUMMO!!! I made the muffins last night and they are delicious. I made half of them as normal, but the second half, I put in chocolate chips. Both of them were delicious. The kids never knew the difference. I brought them to work with me this morning to share and as I am typing, I can still hear people in the kitchen talking about them! :) Just thought I would brag on you!

Made these muffins today! I used whole wheat flour instead of regular flour and it still tastes great! I also didn't have a full cup of butter (1/2 cup) and thought it was a bit too sweet with 1 cup of sugar. I might cut the sugar in half next time, or like you said, substitute with applesauce. Delicious recipe! I love your food posts!

These are delicious especially warm from the oven. I was able to get 36 muffins. I think I will cut back some on the sugar next time.
