jeannie's lasagna

My mom bought me this nifty book when I was about to leave home for college. It's really neat. It has easy recipes, laundry tips like how to get out stains, and basic first aid information.



One thing I really like about the book is that it has blank pages where you can write in your favorite recipes. And one of my favorite recipes ever is Jeannie's Lasagna.


So here it is folks. THE BEST LASAGNA EVAH. Seriously, this is the best lasagna I've ever tasted. The secret's in the curry. (I've posted this recipe before but never with the photos or clever asides.)

Ingredients:



6 lasagna noodles
1 lb ground beef
1 onion, chopped
1 jar spaghetti sauce (original or traditional)
1/2 tsp curry powder
1 tsp oregano or Italian seasoning
8 oz cottage cheese
8 oz mozzarella cheese, shredded
8 oz cheddar cheese, shredded

1. Preheat oven to 350.


2. Cook lasagna noodles per package directions. Put a little bit of olive oil in the water.
(Barefoot Contessa says this will keep the pasta from sticking. And whatever the BC says, we do.)

3. Chop onion.
- Get out your really big knife so you can do it like they do on The Food Network. Attempt chopping.


- Put your big knife away for fear of accidentally killing yourself.


- Get out your Quick Chop. Ask forgiveness for trying to be all hoity toity by using your big knife. Remember how much you love your Quick Chop.


- Drop Quick Chop on floor, scattering onion bits everywhere, almost giving your dog a heart attack.

4. Brown hamburger and onion.


5. Add jar of spaghetti sauce, curry powder, and Italian seasoning.
- Wish husband was home to open stupid lid of stupid sauce.



6. Simmer until most of liquid is gone.



7. Layer:
3 noodles, ½ meat sauce, ½ cottage cheese, ½ mozzarella cheese, ½ cheddar cheese.
Repeat layers.

Break to take care of an adorable baby who just woke up from his THREE HOUR NAP very happy.



8. Bake uncovered for 30-45 minutes (the lasagna, not the baby.)
9. Prepare bread:
- Mix crushed red pepper, garlic powder, black pepper, oregano, rosemary, basil, and parsley (about 1/2 TBSP of each)
- Brush 4 to 6 pieces of bread with Extra Virgin Olive Oil.
- Sprinkle seasoning on bread
- Bake with lasagna the last 10 to 12 minutes.

10. Be thankful you have a dog who will eat all the cheese and such that has fallen on the floor, because, Heaven Forbid, you actually sweep your floors.

This is awesome. Don't know what I love more: Jonah's laughing face, the fact that he took a 3 hour nap (sanity time for you), the witty commentary, or the recipe.

I have said it before, but I really think you should look at writing a book. You've got alot to offer compared to some other successful mommy authors.

ooh yum! I have this book too and will have to add in the recipe. It looks great! And I'm definitely looking into getting one of those chopping things, too - knives are so over-rated!

curry? but it's not italian. however, my husband loves lasanga and i have said i would make it soon, so i am going to try your recipe, curry and all. i am taking your word for this. it really does look delicious.

oh!! i must have lost my invitation to dinner (haha) another great receipe that I will try...very similar to my lasagna, but I will have to add the curry..

Hey! I was thinking of you guys today. I'm a Home Health nurse and I do a lot of dressing changes. I just went to the wound clinic and the latest and greatest product that they have to wick away moisture and keep it away from the skin is...maxipads! LOL It does work REALLY well... A LOT better than ABD's. I'm not sure what you're using now or if this will work for you but I thought I'd put it out there. Anything to make your and Jonah's lives easier!

Isn't that the same book with those zucchini fry things? They were our healthy option for our Super Bowl party, you know, the one time we had a Super Bowl party. (I'm sure you don't remember what I'm talking about - I love you by the way.)

BTW - If you want to be the blogging world's hero (as if you aren't already!) you really should do a post on Anne's chicken/rice/green bean casserole. MMm. I'm making that as soon as it gets cold out.

This is the perfect post. A recipe for lasagna that I might actually make because it sounds easy and yummy. And it has pictures - I love cooking with pictures. I totally agree about the Barefoot Contessa. She's fabulous and all her cookbooks have pictures. To top it off, we get pictures of a cute, well-rested, happy baby. WooHoo!

I got that cookbook from my aunt when I graduated from high school also. I now need to find it and use some of the recipes I had written in the back. Lasagna looks delicious. Will have to try that receipe sometime soon.

Of the 2 cookboocks you've posted, I have both of them and absolutely love both of them. My other favorite is the 4 ingredient cookbook. Everything is so easy and tastes yummy!

I love your posts SO much! Although this Italian girl will NEVER use cheddar and cottage cheese in her lasagna--only ricotta and mozzarella!! Still though--you are awesome :-) And SO FUNNY!!

Sounds like a great (and easy) lasagna recipe! Even though I stay at home with our boys, my husband does most of the cooking around here. However, I think I'll surprise him and have this ready one night :) Thanks for sharing!

YUM! Although I'll say that my Italian heart will be making its own sauce rather than jarred :) What can I say, I'm a traditionalist (and I don't have a baby at home...just a curious three year old).

Absolutely loved the asides in the recipe. Much needed, especially about the food chopper.

Maybe the key to three hour naps are smelling lasagna cooking? Perhaps you can bottle that smell and waft it under his nose on the nights he likes to think he's an owl.

Man that looks super delicious. Too bad we couldnt come over for some of that. My sweet husband will NOT EAT lasagna. So no use making that dish here. But I think I will try the bread cause that sounds amazing!
